Every quarter our roasting team picks one experimental micro-lot that made the whole cupping table stop and stare. This season: a honey-processed lot from the Palani foothills that tastes like peach iced tea and a flower shop. We roast it in batches small enough to fit on one shelf. When it is gone, it is gone.
